Smoky and Spicy Chipotle Quinoa

Ingredients
  • 1 tablespoon butter
  • ¼ small onion, small diced
  • 2 chipotles canned in adobo, seeded and finely minced
  • 1 teaspoon paprika, plus more for garnish
  • 1 clove garlic, minced
  • 1 cup quinoa
  • 2 cups chicken broth
  • 2 tablespoons chopped fresh cilantro
  • salt and pepper to taste

Instructions
  1. Place a medium saucepan over medium heat.
  2. Add the butter followed by the onion, chipotles, paprika, salt, and pepper and cook just until the onion begins to become tender.
  3. Add the garlic and cook for 1 minute more. Increase the heat to high. Add the quinoa, broth, salt and pepper, then bring to a boil.
  4. Cover, reduce to a simmer, and cook until the quinoa becomes tender, about 25 minutes.
  5. Remove the lid, fluff with a fork, sprinkle with cilantro and paprika, then serve.Smoky and Spicy Chipotle Quinoa

Slow Cooked Sweet and Spicy Baby Back Ribs

Ingredients
  • 1 rack of ribs
  • 1 cup barbecue sauce
  • 2 tbs. Worcestershire sauce
  • 2 tbs. siracha
  • 2 tbs. maple syrup
  • 2 cloves garlic, minced
  • Salt and pepper

Instructions
  1. Rub the ribs with salt and pepper, and minced garlic
  2. In a bowl combine all of the other ingredients (BBQ sauce, Worcestershire sauce, siracha, maple syrup) and stir to combine.
  3. Add the ribs to the slow cooker, pour the BBQ sauce mixture over the ribs. Cook on low for 6 hours. The meat should be very tender and almost falling off of the bone.
  4. Remove from slow cooker.

Ingredients
  • 1 pound sirloin steak, trimmed and cut in thin strips
  • 2 tablespoons vegetable oil
  • 2 carrots, thinly sliced on the diagonal
  • 3½ cups medium broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh ginger
  • ½ teaspoon orange zest
  • ½ cup freshly squeezed orange juice
  • 2 tablespoons soy sauce
  • ¼ teaspoon crushed red pepper
  • 4 scallions, sliced on the diagonal
  • salt to taste

Instructions
  1. Preheat a large skillet or wok over high heat.
  2. Season the beef strips with salt. Add the oil to the pan followed by the beef and cook until browned and cooked through, about 6 minutes.
  3. Transfer to a plate and set aside. Add the broccoli and carrots to the pan and cook until they begin to become tender, about 7 minutes more.
  4. Add the ginger, orange zest, juice, soy sauce, and red pepper then cook for 3 minutes more.
  5. Add the beef back to the pan and heat through.
  6. Sprinkle with the sliced scallions, then serve.
