Black Bean Burgers with Cheddar and Jalapeno

Ingredients
  • ¼ cup vegetable oil, divided
  • 1 small onion, small diced
  • 2 jalapenos, small diced and divided
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, drained
  • ¼ cup crushed tortilla chips
  • 1 egg, beaten
  • ½ cup shredded cheddar cheese, divided
  • ½ cup mayonnaise cream
  • heavy pinch of cumin
  • 4 hamburger buns
  • 4 slices of red onion
  • 4 lettuce leaves
  • Salt and pepper to taste

Instructions
  1. Place a large skillet over medium heat. Add 1 tablespoon of oil followed by the onion, ½ of the jalapeno, salt, and pepper. Cook just until the onions begin to soften, about 3 minutes. Remove the pan from heat and stir in the garlic. Add the beans and mash with a potato masher or fork until smooth, yet still slightly chunky. Stir in the crushed tortilla chips, egg, and ¼ cup of the cheddar. Form the mixture into 4 equally-sized patties.
  2. Preheat the oven to 400ºF. In a small food processor, combine the mayonnaise, the remaining jalapeno, cumin, salt, and pepper, then blend until smooth. Strain the mayonnaise mixture into a small bowl and place in the refrigerator.
  3. Place a large skillet over medium heat. Add the remaining 3 tablespoons of oil to the pan followed by the patties and cook until browned on both sides and cooked through in the middle, about 6 minutes per side. Transfer to a plate.
  4. Place the buns, cut side up on a baking sheet and toast until golden, about 7 minutes. Top each bottom bun with a burger, sprinkle the burgers with the remaining cheddar, and spread about 1 tablespoon of the jalapeno cream on the cut side of the top bun. Top each burger with a slice of onion, lettuce leaf, and a dressed bun, then serve.Black Bean Burgers with Cheddar and Jalapeno

 

Baked Cheddar-Broccoli Rice Cups

Ingredients:

  • 1 10 – ounce thawed broccoli
  • 1 cup chicken stock
  • 1 cup white rice
  • 1/4 cup Ranch Dressing
  • 2 eggs, lightly beaten
  • 3/4 cup grated cheese (any of your favourite kind)
  • 1/2 tsp salt and pepper – to taste

 

Directions:

  1. Boil rice.
  2. Move cooked rice to a bowl to cool for a minute.
  3. Throw in all the ingredients, but only use 1/2 of the cheese.
  4. Grease a 8 cup muffin tray and make balls accordingly, thereafter sprinkling the rest of cheese on top.
  5. Put in the oven for 25 minutes and bake at 350 degrees – until golden and crisp.
