Black Bean Burgers with Cheddar and Jalapeno

Ingredients
  • ¼ cup vegetable oil, divided
  • 1 small onion, small diced
  • 2 jalapenos, small diced and divided
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, drained
  • ¼ cup crushed tortilla chips
  • 1 egg, beaten
  • ½ cup shredded cheddar cheese, divided
  • ½ cup mayonnaise cream
  • heavy pinch of cumin
  • 4 hamburger buns
  • 4 slices of red onion
  • 4 lettuce leaves
  • Salt and pepper to taste

Instructions
  1. Place a large skillet over medium heat. Add 1 tablespoon of oil followed by the onion, ½ of the jalapeno, salt, and pepper. Cook just until the onions begin to soften, about 3 minutes. Remove the pan from heat and stir in the garlic. Add the beans and mash with a potato masher or fork until smooth, yet still slightly chunky. Stir in the crushed tortilla chips, egg, and ¼ cup of the cheddar. Form the mixture into 4 equally-sized patties.
  2. Preheat the oven to 400ºF. In a small food processor, combine the mayonnaise, the remaining jalapeno, cumin, salt, and pepper, then blend until smooth. Strain the mayonnaise mixture into a small bowl and place in the refrigerator.
  3. Place a large skillet over medium heat. Add the remaining 3 tablespoons of oil to the pan followed by the patties and cook until browned on both sides and cooked through in the middle, about 6 minutes per side. Transfer to a plate.
  4. Place the buns, cut side up on a baking sheet and toast until golden, about 7 minutes. Top each bottom bun with a burger, sprinkle the burgers with the remaining cheddar, and spread about 1 tablespoon of the jalapeno cream on the cut side of the top bun. Avocado Tacos with Black Bean-Corn Salsa

Ingredients
  • 1 (14-ounce) can black beans, rinsed and drained
  • 1½ cups frozen corn, thawed
  • ½ red onion, small diced
  • 1 roma tomato, seeded and small diced
  • ¼ cup lime juice
  • 1 jalapeno, diced (seeds removed if you prefer a less spicy salsa)
  • ¼ cup chopped fresh cilantro
  • 12 (6-inch) corn tortillas
  • 3 large avocados, peeled, pitted, and sliced
  • Salt to taste

Instructions
  1. In a medium bowl, combine the black beans, corn, onion, lime juice, cilantro, and salt. Set aside to marinate.
  2. Place a large, heavy skillet over high heat. Heat the tortillas, one at a time, on the skillet until soft and pliable, about 1 minute per side.
  3. Wrap in a clean kitchen towel to keep warm.
  4. To serve, place and even amount of avocado in each tortilla and season lightly with salt. Spoon on the salsa, draining as you go, then serve.Avocado Tacos with Black Bean-Corn Salsa
