Refreshing Basil Lemonade

Ingredients
  • 1¾ cup granulated sugar
  • 8 cups filtered water, divided
  • 1½ cups freshly squeezed lemon juice
  • 1 small bunch basil, leaves separated
  • 4 cups ice
  • 1 lemon, cut into 4 slices, then each slice cut in half crosswise

Instructions
  1. Place the sugar and 2 cups of the water in a small saucepan over medium-low heat.
  2. Heat the water, stirring constantly, until the sugar dissolves.
  3. Transfer the sugar water to a 2-quart pitcher along with the remaining 6 cups of water, lemon juice, and basil leaves.
  4. Stir well to combine, then place the pitcher in the refrigerator for 1 hour to allow the basil to marinate in the lemonade.
  5. When ready to serve, place ½ cup of ice in 8 glasses and pour in the lemonade.
  6. Garnish each glass with a lemon slice, then serve.Refreshing Basil Lemonade

Ingredients
  • 10 ounces dried Fettuccine
  • 1 (14-ounce) can white beans such as Northern or Cannellini
  • 1 teaspoon lemon zest
  • ¼ cup heavy cream
  • ½ cup shredded Parmesan
  • 1 tablespoon lemon juice
  • ½ cup firmly packed fresh basil leaves, cut into ribbons
  • small basil leaves for garnish
  • salt and pepper to taste

Instructions
  1. Cook the Fettuccine according to the package directions. Reserve ½ cup of the pasta water, then drain.
  2. Place the pasta, pasta water, white beans, lemon zest, heavy cream, and Parmesan in the pot that was used to cook the pasta.
  3. Stir until the beans are warmed through and the cheese is melted, about 4 minutes.
  4. Stir in the lemon juice and fresh basil.

  • 4 oz. peach puree
  • 12 oz. sparkling white grape juice
  • Lemon juice
  • 4 basil leaves, whole

Instructions
  1. Divide peach puree between 4 champagne flutes. Add the sparkling grape juice, and gently stir.
  2. Add 2 drops of lemon juice to each flute.

Ingredients
  • 1 loaf of french bread, cut in half lengthwise
  • ⅓ cup butter, softened
  • ½ cup basil
  • 3 cloves garlic
  • ¼ cup Parmesan cheese
  • Salt and pepper

Instructions
  1. Pre-heat oven to 375 degrees.
  2. In a food processor, combine butter, basil, garlic, and Parmesan cheese. Basil should still be chunky.
  3. Spread basil/butter mixture over cut halves of bread. Season with salt and pepper.
  4. Cook in oven on foil-lined baking sheet for 10-15 minutes, or until bread reaches desired doneness.Basil Garlic Bread

Ingredients
  • 12 strawberries
  • 2 lemons
  • Handful of basil
  • 2 12oz. cans of tonic
  • Several dashes of bitters

Instructions
  1. Juice and strain the seeds from the lemons into a pitcher with ice
  2. Muddle 3 strawberries and a couple of sprigs of basil into the bottom of the 4 glasses.
  3. Add the tonic and bitters to the pitcher with ice and lemon juice.

Creamy Tomato Basil Soup with Parmesan

Ingredients
  • 28 oz. can crushed tomatoes
  • 1 cup finely diced onions
  • 1 cup finely diced carrots
  • 1 cup finely diced celery
  • ¼ cup vegetable oil
  • 4 cups chicken broth
  • 1 tbs. dried basil
  • 1 tsp. dried oregano
  • 1 bay leaf
  • ½ cup flour
  • ½ cup butter
  • 1 cup Parmesan cheese
  • 2 cups half and half
  • salt and pepper

Instructions
  1. Heat vegetable oil in 4 quart soup pot. Add celery, onions and carrots. Saute 5 minutes. Add basil, oregano, bay leaf, tomatoes, and chicken broth. Bring to a boil, reduce heat and simmer until carrots are tender, about 15 minutes.
  2. While soup simmers, prepare a roux. Melt butter over low heat, add flour and cook, stirring constantly, 5-7 minutes. Slowly stir in 1 cup hot soup. Add another 3 cups and stir until smooth. Add back into soup pot.
  3. Simmer, stirring constantly, until soup begins to thicken. Add Parmesan cheese and whisk to blend. Stir warmed half and half, and salt and pepper to taste. Simmer over low heat 15-20 minutes, stirring occasionally.Tomato Basil Soup
