Ingredients
  • 8 ounces dried bow tie pasta
  • 6 slices bacon, cut crosswise into ½-inch thick slices
  • 3 cloves garlic, minced
  • 2 medium avocados, pitted, peeled, and sliced crosswise
  • ⅔ cup chopped fresh parsley
  • ¼ teaspoon lime zest
  • 2 tablespoons lime juice
  • ½ cup shredded Parmesan
  • salt and pepper to taste

Instructions
  1. Cook the pasta according to the package directions. Drain and set aside, reserving ½ cup of the pasta water and the pot that was used to cook the pasta.
  2. While the pasta is cooking, place the the bacon in a cold pan, then place over medium heat.
  3. Cook until almost crisp, then add the garlic and cook for 1 minute more. Using a slotted spoon, transfer the bacon and garlic to the pot that was used to cook the pasta along with the avocados, parsley, lime zest and juice, Parmesan, the reserved pasta water, salt, and pepper.
  4. Reduce the heat to medium-low and gently cook the pasta until all of the ingredients are warmed through, then serve.Pasta with Avocados, Bacon and Parmesan

Caramelized Brussels Sprouts with Blue Cheese and Bacon

Ingredients
  • ½ lb. Brussel sprouts
  • 2 strips of bacon
  • ½ cup chicken stock
  • ¼ cup blue cheese crumbles
  • ¼ cup balsamic vinegar
  • 2 sprigs of thyme
  • Salt and pepper to taste

Instructions
  1. Cook bacon strips in non-stick pan, set aside
  2. Wash and cut the brussel sprouts in half
  3. Re-heat the pan with the bacon drippings on medium high heat, add brussel sprouts to pan, cut side down
  4. Flip brussel sprouts once they’ve turned golden brown, about 6 minutes
  5. Add chicken stock and cook uncovered until the stock is all soaked into the sprouts, about 10-12 minutes
  6. While the sprouts are cooking, place balsamic vinegar to a small sauce pan, cook over medium high heat until reduced by half, 6-8 minutes
  7. Chop up cooked bacon into small bits
  8. Combine cooked brussel sprouts, bacon, blue cheese crumbles, thyme flowers, salt and pepper in a bowl.
  9. Dish sprouts onto plate, drizzle balsamic reduction over the top of the sprouts.Carmelized Brussel Sprouts

 

Roasted Ranch Potatoes with Bacon and Cheese

Ingredients:
  • 4 pounds potatoes
  • 1 cup ranch dressing
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup crumbled, cooked bacon
  • 2 tablespoon dried dill weed
  • 6 scallions, washed and chopped
  • Salt and pepper to taste
Preparation:
Preheat oven to 350°F.
In a Large bowl mix all the ingredients until the potatoes are completely covered with the sauce.
Transfer to a baking pan, cover with foil and bake between 55-75 minutes.
During the baking time, turn over the potatoes couple of time to insure even baking.
Remove the foil and set the oven to 400 degrees and bake for 15 minutes more.
Add cheese and bake a few more minutes until you see some brown spots on the cheese.
For serving, garnish with scallions.
