Ingredients
  • 1 head Romaine lettuce
  • 6 oz. french bread
  • ¼ cup shaved Parmesan
  • ¼ cup favorite caesar dressing
  • 4 eggs, poached
  • 2 tbs. olive oil
  • 1 clove garlic, minced
  • Salt and pepper

Instructions
  1. First, make the croutons. Tear small, bite-sized pieces of bread and place in a bowl. Toss with garlic, olive oil, salt and pepper. Place in pre-heated 400 degree oven for 8-12 minutes, until golden brown.
  2. Wash and dry romaine, then finely chop.
  3. In a large mixing bowl toss chopped lettuce with dressing, Parmesan, croutons, salt and pepper.

Ingredients
  • 4 cups arugula
  • 2 medium beets
  • ½ cup grape tomatoes, sliced
  • ¼ cup goat cheese, crumbled
  • ½ cup olive oil
  • 2 tbs. lemon juice
  • ¼ cup champagne vinegar
  • 1 tsp. dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper

Instructions
  1. First, make the vinaigrette: combine olive oil, lemon juice, vinegar, garlic, dijon a pinch of salt and pepper in a mason jar. Close the lid tight, and shake vigorously to blend.
  2. Peel beets, then cut into ½ inch cubes. In a bowl, toss with olive oil, salt and pepper, roast in oven for 35-45 minutes at 400 degrees.
  3. Wash and dry arugula.

  • ½ head of green cabbage
  • 2 carrots
  • ½ red bell pepper
  • ⅓ cup of mayonnaise
  • 3 garlic gloves
  • ¼ cup cilantro
  • juice of 3 limes

Instructions
  1. Finely chop cabbage into bite-sized pieces, place into large bowl
  2. Peel skin from carrots then grate carrots into bowl
  3. Finely julianne red bell pepper, add to bowl
  4. Create dressing by blending together mayo, garlic, cilantro and lime juice until combined.

Greek Pasta Salad

Ingredients

For the Salad

  • 5 oz dry pasta of chice
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1 cup  olives
  • ½ cup red onion
  • 3 oz   feta cheese
  • 5 Fresh Oregano leafs

For the Dressing

  • 1 tsp.  ground mustard
  • ¼ cup white wine vinegar
  • ½ cup olive oil
  • ½ tsp. dried oregano
  • ½ tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. dried basil

Method

Cook pasta, wash it and drain.
In a bowl, add the salad ingredients and mix well.
In a small bowl mix all the dressing ingredients and stir well until it all combines nicely.
Pour the Dressing into the salad bowl and refrigerate.
To serve – Add some chopped Oregano, Basil, Salt and Pepper.

Baked Cheddar-Broccoli Rice Cups

Ingredients:

  • 1 10 – ounce thawed broccoli
  • 1 cup chicken stock
  • 1 cup white rice
  • 1/4 cup Ranch Dressing
  • 2 eggs, lightly beaten
  • 3/4 cup grated cheese (any of your favourite kind)
  • 1/2 tsp salt and pepper – to taste

 

Directions:

  1. Boil rice.
  2. Move cooked rice to a bowl to cool for a minute.
  3. Throw in all the ingredients, but only use 1/2 of the cheese.
  4. Grease a 8 cup muffin tray and make balls accordingly, thereafter sprinkling the rest of cheese on top.
  5. Put in the oven for 25 minutes and bake at 350 degrees – until golden and crisp.
