Ingredients
  • 2 tablespoons vegetable oil, divided
  • 4 pitas
  • 4 ounces sliced cremini mushrooms
  • 2 cups firmly packed baby spinach
  • 1 clove garlic, minced
  • 1 cup marinara or spaghetti sauce
  • 1 cup shredded Mozzarella
  • ¼ cup shredded Parmesan
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
  1. Preheat the oven to 475ºF.
  2. Brush half of the vegetable oil on one side of the pitas and set aside.
  3. Place a medium skillet over medium-high heat.
  4. Add the remaining 1 tablespoon of oil followed by the mushrooms, salt, and pepper. Cook, stirring frequently, until the mushrooms begin to brown, about 7 minutes.
  5. Add the spinach and garlic, then stir until the spinach has wilted, about 2 minutes more.
  6. Transfer the spinach mixture to a plate.
  7. Place a baking sheet in the oven to preheat. Place the pitas, oil side down, on a clean work surface and spread with an even amount of marinara sauce, followed by the Mozzarella, the spinach mixture, Parmesan, and finally the oregano.
  8. Carefully place the pitas on the hot baking sheet and cook until the cheese has melted and browned, about 7 minutes.

Ingredients
  • 1 flour tortilla
  • ⅓ cup parmesan cheese
  • 1 tbs. tomato sauce
  • ½ tbs. olive oil
  • 1 tbs. sun-dried tomatoes
  • ½ tsp. capers
  • 1 clove garlic, finely diced
  • ½ oz. red onion, sliced paper thin
  • salt and pepper

Instructions
  1. Pre-heat oven to 375 degrees
  2. Spread olive oil over tortilla using the back of a spoon
  3. Spread a thin layer of tomato sauce on top of the olive oil layer
  4. Sprinkle with salt and pepper
  5. Add a layer of parmesan cheese, then place the toppings (sun-dried tomatoes, capers, garlic, red onion) over the cheese
  6. Place directly on oven rack and bake for 6-8 minutes until the edges of the tortilla are nicely browned.
